Melt the chocolate and butter in a metal bowl placed over a pot of simmering water, stir gently until melted.
Remove from the heat and allow to cool.
Whip the cream to soft peaks and stir in the coffee.
In a clean bowl, whip the egg whites with the salt until foamy, then gradually add the sugar while continuing to whip the whites until they hold a soft peak.
Fold the whipped cream into the cooled chocolate in 2 additions.
Fold in the whites all at once.
Layer the mousse with peaches and 3 individual layers of 1 teaspoon chocolate shavings in serving cups, Top each with a cherry.
