Coconut Milk Pancakes Recipe

This coconut milk pancake recipe is a good option for the lactose intolerant person.


Coconut Milk Pancakes

2 cups all-purpose flour
3 Tablespoons sugar
2 1/2 teaspoons baking powder
1/2 teaspoon baking soda
2 large eggs
2 cups coconut milk
2 teaspoons grape seed oil
1 teaspoon vanilla extract


Whisk together flour, sugar, baking powder and baking soda. Add in eggs, coconut milk, oil and vanilla mix until smooth. Let sit for 10 minutes.

Heat up a large frying on medium - high heat. Grease with butter.

Ladle some batter on to pre-heated pan. Cook on each side for about 2 minutes or until golden brown on both sides.

Serve warm and with butter and maple syrup.
