Cod Fishcake Recipe

This cod fishcake recipe is easy to make and very tasty.


3 Tablespoons olive oil
1 large onion, finely chopped
1 1/2 teaspoons salt
1/4 teaspoon fresh ground black pepper
1 1/4 lbs fresh cod, bones removed
2 Tablespoons finely chopped fresh herbs
1 egg, lightly beaten
1/3 cup fine dry breadcrumb


Preheat oven to 200F.

Over medium heat, in a large skill heat 1 Tablespoon of olive oil.

Add onion, 1/2 tsp salt, and 1/8 tsp pepper.

Cook until the onions are translucent, about 5 minutes. Set aside.

Cut fish into large chunks; and coarsely chop in a food processor.

Transfer to a medium bowl.

Add onion, herbs, egg and combine well.

Add remaining salt and pepper. Form 8 3-inch patties; dredge them in bread crumbs, shaking off excess.

In a large skillet, over medium heat heat another spoonful of oil.

Cook half the patties at a time so you do not crowd the pan.

Cook on each side for about 5 minutes until golden.

Remove to a baking sheet, cover with foil.

Wipe out skillet, return to heat and add remaining oil.

Cook remaining patties and serve immediately.
