Cod Fishcakes Recipe

A simple and delicious recipe for cod fish cakes with corn, these fish cakes are great served with a salad.


2 Tablespoons butter
2 cups cod fish
1 cup bread crumbs
1/4 teaspoon salt
1/4 teaspoon pepper
1/3 cup mayonnaise
1 egg, beaten
1/8 cup canned corn
3 Tablespoons green onions, chopped


Drain the fish; break up fine.

Mix fish with bread crumbs, corn, green onions, mayonnaise and salt and pepper.

Cover and refrigerate for at least 10 minutes.

Form 1/3 to 1/2 cup of mixture into patties.

Heat butter to medium-high heat in a large skillet.

Cook on each side 4 minutes or until golden brown.
