This Coffee and Cookie parfait recipe is a wonderful combination of flavors and a perfect light dessert.
Melt unsweetened chocolate over a double boiler or in the microwave and set aside to cool.
Meanwhile, beat butter, powdered sugar and vanilla together until smooth. Add cooled chocolate, beating until well combined. Add 3 tablespoons coffee liqueur and continue beating until smooth. Set aside.
In a medium bowl, whip cream with granulated sugar until stiff. Fold this cream mixture into the chocolate mixture. Spoon into parfait glasses and garnish with crumbled wafter cookes, dust with confectioners sugar. Keep refrigerated until served. Makes 6
