This cottage cheese donut recipe is also traditionally known as papanasi in Romania.
Use a thermometer and heat oil in a deep pot or deep fryer to 160C.
In a medium bowl mix together cottage cheese, flour, semolina flour, eggs and salt.
Use clean hands to form into a round with a hole in the middle.
Transfer one or two at at time to the hot oil for about 2 minutes on each side or until golden brown.
Remove and let drain on paper towel before serving.
Serve with jam and sour cream.
