Here is a recipe for a great easy to make ahead Crab Stuffed Campari Tomato Appetizer that will be a hit when entertaining.
In a bowl, combine the crab meat, rice, sliced celery and onions, pine nuts, basil or oregano flakes, juice of half a lemon, and salt and pepper.
Slice the tops off the tomatoes and scoop out the innards which you can stir into the crab stuffing.
Grate the cheese.
Fill the tomatoes with the prepared stuffing and place onto a baking tray. Put a little cheese on top of each tomato and place into a preheated 350 degree F. oven for 10-15 minutes, until warmed through and the cheese is melted.
