Cucumber Radish Salad Recipe

This cucumber radish salad is fresh, crispy and perfect to serve with a summer meal.


12 radishes, washed and cut thinly in rounds
1 seedless English cucumber, washed and cut thinly in rounds
1/2 teaspoon kosher salt
1/2 cup rice vinegar
1 tablespoon fresh dill
2 tablespoons extra virgin olive oil
2 tablespoons mayonnaise
2 tablespoons lime juice


Use a large mixing bowl and toss the radish and cucumber slices with salt.

Add in vinegar, olive oil, dill, mayo and lime juice. Toss to coat evenly.

Let stand at room temperature for about an hour, covered with plastic wrap.

Serve. Makes 8 servings.
