This recipe for curried chicken is a flavorful dish great served over rice.
In a large frying pan, set on medium-high heat, Melt butter.
Add chicken pieces and cook a few minutes on each side to brown.
Remove chicken pieces and set aside.
Stir onion into hot butter until soft.
Stir garlic and curry power, ginger and tomato paste into onions.
Pour in broth, stir to combine.
In a small bowl whisk cornstarch and water until no lumps remain.
Return chicken to pan, stir chicken to coat.
Cover and reduce heat, simmer 30-40 minutes, until chicken is cooked through.
Salt and pepper to taste
Serve over rice with sauce.
