Danish pancakes are easy to make and even easier to eat! These folks sure know how to bake.
Pre-heat oven to 375 degrees F.
Pour 1/2 teaspoon of oil into each of a mini muffin pan (or use the proper Danish pancake pan if you have on).
In large bowl, beat eggs with milk butter and vanilla.
In separate bowl, mix together flour, sugar, baking powder, nutmeg, and cardamom.
Pour batter into oiled mini-muffin tins until each is about 3/4 full.
Bake for 8 minutes then take out of oven and turn each one over. Bake an additional 8 minutes.
Cool slightly before serving with fruit syrup and sprinkled with powdered sugar.
