A Very tasty recipe for dark chocolate orange cupcakes. These are a favorite treat.
1 cup all purpose flour
1/4 cup cocoa powder
3/4 cup powdered sugar
3/4 cup yogurt
1/4 teaspoon baking soda
3/4 teaspoon baking powder
3 Tablespoons vegetable oil
1 tsp orange extract
a pinch of salt
1/2 cup butter, at room temperature
1/2 cup confectioners sugar
1/4 cup cocoa
1/4 cup light corn syrup
1/2 teaspoon orange extract
1/2 teaspoon espresso powder
1/4 cup semi sweet chocolate, melted and cooled
24 slices of orange chocolate for garnish.
Preheat oven to 325 degrees F.Line mini 24 cupcake pan with liners.
Add powdered sugar to thick yogurt and beat well, add baking powder, baking soda & a pinch of salt to the yogurt, and mix well. Let it rest for 5 minutes. You’ll see air bubbles starting to form. Add oil and extract to the yogurt & mix well
Sift in flour and cocoa powder together. Mix gently until flour mixture is incorporated into the wet mixture. Spoon the batter into each cup up to 3/4 full.
Bake for 20 minutes. Let it cool completely.
For the frosting.Add the butter, sugar, cocoa and salt to a food processor. Process until smooth, scraping the sides of the bowl once or twice, about 30 seconds. Add the corn syrup, vanilla and espresso powder and process just until combined, about 10 seconds. Scrape the sides of the bowl one more time, and then drizzle in the chocolate. Pulse until the frosting is creamy, about 15 seconds.
Once cupcakes are fully cooled pipe frosting into swirls and top with a chocolate orange slice.
