The most incredible cheesecake recipe on the internet.
Use an 11” springform or removable bottom pan.
In a bowl, mix crumbs with melted butter & cinnamon until lightly moist.
Spread mixture on bottom of pan, firmly press down on all sides.
Melt chocolate in a double boiler over hot water & let cool until luke warm.
Beat cream cheese thoroughly, scraping bowl often. 10 minues works so set a timer while you beat.
Add sugar & beat for 10 minutes, scraping bowl often.
Add eggs & mix only until blended.
DO NOT OVERBEAT AFTER EGGS ARE ADDED
Mix in cocoa, vanilla and melted chocolate – be sure mixer is running when adding chocolate –mix only until blended.
Mix in sour cream only until blended.
Fill prepared pan & bake at 250degrees F (120C)
Check doneness after 1 ½ hours. The cheesecake should seem a bit liquid in the center or they will be overdone.
Refrigerate the cake when completely cool and keep in the refrigerator.
When ready, ice with a thick layer of sour cream.
