Fruit juice gummy bears are an easy treat to make and are much better for you than the store bought variety. Try them with various types of fruit juice. For bright colors you may have to add a drop of natural food coloring, or else mostly the gummies will be a bit less brilliant looking.
In a medium saucepan bring juice to a boil.
Allow the juice to cool for 3 minutes, then stir in lemon juice and stevia, stirring to dissolve.
Very gradually, whisk in gelatin.
Note that if you whisk it in too quickly your gummies will be lumpy.
Allow mixture to cool almost to room temperature, then pour into gummy bear molds
Place in fridge for 2 hours before serving.
