Griddle Cakes With Fresh Blueberry Puree Recipe

Sweet and delectable light pancakes are so fun to make on the barbecue!


Serves 6
1/2 cup plain flour
2 tsp baking powderpinch of salt
1/2 cup fine cornmeal
2 tbsp light sugar
1 egg
1 1/4 cups milk
2 tbsp oil
* Note: If you can find organic cornmeal, it is a great option since most corn is genetically modified.

2 cups fresh or frozen blueberries
1 sliced banana
1 tbsp honey


Sift your flour, baking powder and salt into a large bowl, and then stir in your sugar and cornmeal.

Make a well in the center of the ingredients and add the egg.

Beat in your milk, and mix well with a whisk or wooden spoon.

Beat in half your oil.

Heat a griddle or a heavy frying pan on a hot barbecue.

Brush on the rest of the oil, then drop tablespoons of your batter onto it.

Cook for about a minute until you see bubbles start to form and the bottom is golden brown.

Turn your griddle cakes onto other side.

Top with fresh fruit and honey.
