Grilled Vegetable Pasta Salad Recipe

This yummy grilled vegetable pasta salad is a great option for a potluck or barbecue.


4 cups uncooked shell pasta


2 Tablespoons red wine vinegar
2 Tablespoons water
3/4 teaspoon salt
1/2 teaspoon minced garlic
1/8 teaspoon pepper
2 teaspoons extra virgin olive oil
3 ripe tomatoes, sliced into bite size pieces


Olive oil
1 green pepper, sliced into bite size
1 medium sized eggplant, sliced into bite size
1/2 cup chopped fresh basil leaf

Serves 2 - 4


Cook pasta in large pot of boiling water until al dente.

While pasta is cooking whisk red wine vinegar, water, salt, minced garlic, pepper, and olive oil. Stir in tomatoes and let marinade in dressing. Set aside.

Grill green peppers and eggplants on a BBQ until tender.

In a large bowl mix together pasta, grilled vegetables, dressing, and basil. Serve and enjoy.
