Herbed Sweet Potatoes Recipe

This herbed sweet potato recipe is fantastic. So easy to prepare and once you have made it once you can adjust the seasonings to your personal taste.


4 sweet potatoes, peeled and cut into 1-inch cubes
1/4 cup extra-virgin olive oil, plus more for drizzling
1/4 cup honey
2 teaspoons basil, chopped
1 teaspoon parsley, chopped
1 pinch red pepper flakes
2 teaspoons ground cinnamon
Salt and freshly ground black pepper

(Serves 4-6)


Preheat oven to 375F.

Line a baking sheet with parchment paper. Set aside.

In a large mixing bowl, combine the sweet potato and olive oil. Toss to coat.

Drizzle over the honey and sprinkle over the basil, parsley and red pepper flakes. Toss again to coat potatoes.

Pour the potatoes out in an even layer on the prepared baking sheet.

Sprinkle over the cinnamon, salt and fresh ground pepper.

Transfer baking sheet to the prepared oven and roast potatoes until tender, about 25 to 30 minutes.

Remove the potatoes from the oven and transfer them to a serving platter.

Drizzle over and bit more olive oil.

Serve immediately.
