An Easy recipe for Irish cream cheesecake bites. These delectable individual sized desserts are so yummy.
Crusts
Line a muffin tray with 12 liners.
Combine crumbs, sugar and butter; press onto bottom of the 12 lined muffin holes.
Filling
Soften gelatin in water for 5 minutes; stir over low heat until dissolved. Blend in ¾ cup sugar and beaten egg yolks; cook, stirring constantly, over low heat for 3 minutes and set aside.
Combine cream cheese and gelatin mixture and bourbon, mixing until blended. Chill until thickened but not set.
Beat egg whites until foamy; gradually add remaining sugar, beating until stiff peaks form. Fold egg whites, chocolate and whipped cream into cream cheese mixture; pour over crusts. Chill until firm.
Top with grated chocolate.
