Lemon Cake Loaf Recipe

This lemon cake loaf is moist and tangy. A really nice cake for those that enjoy lemon in their baking.


1 1/2 cups all purpose flour
1 teaspoon baking powder
1/2 teaspoon salt
1 cup butter, at room temperature
1 cup granulated sugar
4 eggs
2 teaspoons pure vanilla extract
lemon zest ( from 1 lemon)
1/4 cup lemon juice

Lemon Glaze
lemon zest ( from 1 lemon)
1 dash salt
1/3 cup lemon juice
1/3 cup sugar

1/2 cup natural shredded coconut

Serves 6 - 8



Preheat oven to 350 degrees F.

Grease a loaf pan with oil.

Whisk together flour, baking powder and salt. Set aside.

Beat together butter and sugar until light and fluffy. Add eggs one at a time and beat after each addition. Mix in vanilla, lemon zest and lemon juice. Mix in dry ingredients until well incorporated.

Pour batter into prepared loaf pan and bake for 50 to 60 minutes, or until an inserted toothpick comes out clean. Set to cool, once cool enough to touch turn out of loaf pan, and let cool on a wire rack.

Lemon Glaze

In a small pot heat lemon zest, salt, lemon juice and sugar. Whisk until smooth and sugar is completely dissolved.

Brush glaze all over the top and sides of loaf until all the glaze is gone. Press shredded coconut over the tops and sides of loaf. Slice loaf and serve.
