Lemon Poppyseed Cake Recipe

This lemon poppyseed cake is delicious served with a cup of afternoon tea.


1/2 cup butter
1 cup granulated sugar
2 eggs
2 Tablespoons lemon juice
1 Tablespoon lemon, zest of
1/2 cup milk
3 Tablespoons poppy seeds
2 Tablespoon ground flax
1 1/2 cups all purpose flour
1 teaspoon baking powder
1/2 teaspoon salt


Preheat oven to 350 degrees F.

Grease and flour a regular sized loaf pan.

In a medium bowl mix butter and sugar until creamy.

Blend in eggs.

Beat for 2 minutes.

Add Lemon Juice, Lemon Zest, milk, flax and poppy Seeds.

Mix another 2 minutes.

Into a separate bowl sift flour, baking powder, and salt.

Gently blend flour mixture a little at a time into the batter mixture.

Pour into pan.

Bake 50-55 minutes until a tester inserted comes out clean.

Allow to cool 5 minutes before removing to a wire rack to cool fully.
