Marshmallow Sweet Potato Bars Recipe by Melecotte

Ingredients
2 medium sweet potato3 cups all-purpose flour
2 tsp ground cinnamon
1 1/2 tsp. baking powder
1/2 tsp salt
1/2 tsp nutmeg
1/2 tsp ground ginger
1 cup unsalted butter, at room temperature
1 1/2 cup packed brown sugar
4 large eggs, room temperature
2 tsp vanilla extract
one 10.5 oz bag of mini marshmallows
