This meatball sandwich recipe is a mouthwatering lunch!
In a large bowl, combine beef, pork, eggs, breadcrumbs, garlic, green onion, basil, salt and pepper.
Mix thoroughly by hand and shape into 1 inch meatballs.
Heat the 2 tablespoons of oil in a large, deep sided skillet over medium to high heat.
Place the meatballs in and cook until browned and cooked through.
Add pasta sauce and basil and bring to boil.
Reduce heat, cover and simmer for 10 minutes.
While the sauce is simmering, preheat the oven to 325°F.
Cut the baguette in half lengthwise.
You can toast the bun lightly if you wish, by placing the halves on a baking sheet and placing in a preheated 325°F. oven for 5-8 minutes.
To assemble the meatball sandwich, scoop a little of the pasta sauce on the bottom section of the bread, spoon the meatballs onto the sauce.
Scoop a little more pasta sauce on top of the meatballs.
Sprinkle the tops with mozzarella cheese and or parmesan cheese, as desired.
Place back into the oven and heat for 5 minutes until the cheeses have melted.
