This meatball recipe uses ground turkey with some tasty seasonings that go very well with creamy mashed potatoes.
Meatballs
Combine the brown sugar, apple cider vinegar, cumin, paprika, cloves, and tomatoes in the pitcher of a blender and blend until smooth. Set aside.
In a large bowl, combine the turkey, breadcrumbs, Italian seasoning and chili powder.
With clean, wet hands, shape the meat mixture into 16 meatballs.
Put a large skillet over medium-high heat and heat 2 tablespoons of olive oil.
Add meatballs, working in batches if necessary.
Cook the meatballs for 2 minutes, turning until brown on all sides.
Once the meatballs are browned, add tomato mixture to the skillet and bring to a simmer.
Reduce heat to a simmer and cook, covered, for 10-20 minutes, until the meatballs cooked through.
Meanwhile, prepare the potatoes.
Put potatoes peeled, washed,cut potatoes in a medium to large saucepan and fill until just covered with water.
Add 1/2 teaspoon of salt.
Boil potatoes until tender. About 10-15 minutes. Once cooked, drain.
Leave the cooked potatoes in the saucepan.
Add the butter and milk and mash the potatoes until smooth and creamy.
Season to taste with salt and fresh ground pepper. Cover with a lid to keep warm.
Once meatballs are cooked through, serve the meatballs and sauce over the mashed potatoes.
If you want you can pipe the mashed potatoes onto the serving dishes.
