This meatloaf and gravy recipe uses both ground beef and ground pork, with some complimentary spices and the recipe also includes an easy to do gravy.
Meatloaf
Preheat oven to 350ºF.
Lightly grease a 9x5-inch loaf pan with vegetable or olive oil. Set aside.
In a large mixing bowl, combine beef, pork, egg, parsley, onion, garlic, celery, thyme, salt and fresh pepper. Mix until well combined.
Transfer meatloaf mixture to the prepared loaf pan and pack well.
Cover with aluminium foil.
Transfer loaf pan to the oven and bake for 1 1/2 hours.
When it is close to being done, make the gravy.
Gravy
Melt the margarine in a large skillet set over medium-high heat.
Add onions and sauté until transparent, about 5 minutes. Add flour, stirring constantly.
Pour in the beef stock, continuing to stir constantly. Add red wine and parsley.
Allow gravy to simmer for 3-5 minutes, stirring constantly, until thickened.
Do a taste test and season with a little salt and pepper to taste.
Remove cooked meatloaf from the oven and place onto a cooling rack.
Let set for 5 minutes before slicing and serving with gravy.
