Mile High Strawberry Cake Recipe

A sweet and fancy layer cake that is filled with whipped cream and fruit then topped with a vanilla glaze.


1 1/2 cups granulated sugar
1 cup butter
6 eggs
3 1/2 cups self-rising flour
1 3/4 cups water
1 teaspoon vanilla
1 cup heavy cream, whipped
3 cups strawberries, sliced thin
1-2 bananas, sliced thin
2 cups confectioner’s sugar
1 Tablespoon butter, room temperature
1 teaspoon vanilla
3-4 Tablespoons milk


Preheat the oven to 400 degrees. Grease two 8 inch cake pans.

To make the batter. Cream together the butter and sugar. Add the eggs all at once and beat until well incorporated. Add the flour and water alternately, beginning and ending with flour. Mix in the vanilla.

Pour 1/2 cup batter into each prepared pan. Smooth the batter to the edges. Bake for approximately 10 minutes or until layers are barely golden on top. Remove from oven and turn out onto cooling racks.

Clean the pans entirely, grease them and repeat baking until all of the layers are baked. You should get 10 very thin layers.

Once all cakes are baked and cooled, whip cream until stiff peaks form.

Make the top glaze, In a medium bowl mix sugar and butter, add vanilla then milk 1 Tablespoon at a time until you get the desired consistency. Mix until smooth

To serve, place first cake layer on a serving plate then alternate whipped cream and fruit layers with cake layers. then top final cake layer with vanilla glaze and remaining strawberries.
