Mushroom Fritatta Recipe

This mushroom fritatta recipe is made with creamy cheeses, tangy onions and fresh parsley.


1 Tablespoon butter
2 cups mushrooms, sliced
8 eggs
1/4 cup sour cream
2 cups swiss cheese, shredded
3/4 cup breadcrumbs
4 green onions, chopped
1/3 cup parsley, chopped
3/4 teaspoon salt
1 dash pepper

Serves - 8


Preheat oven to 350F

In a medium pan, cook butter and mushrooms until tender about 3 - 5 minutes (depending on how you like your mushrooms cooked).

In a medium bowl, give eggs a quick whisk to break them up. Add mushrooms, sour cream, breadcrumbs, green onions, parsley, salt and pepper.

Add egg mix to 10 inch pie pan.

Bake to 30 to 35 minutes, or until firm.
