Noodles For Kids Recipe

This simple noodles for kids recipe can be made even healthier by throwing in a handful of fresh or frozen peas. What kid can resist a heaping plate of buttered noodles?

Ingredients

1 pound egg noodles
4 eggs
1/3 cup parmesan cheese, freshly grated
2 Tablespoons parsley, chopped
salt
1/4 teaspoon fresh ground black pepper
4 Tablespoons butter

(Serves 4)

Directions

Bring a large saucepan of water to boil over high heat.

Add 1/2 teaspoon salt and 1 tablespoon olive oil.

Once boiling, add egg noodles and cook according to package directions.

Meanwhile, in a medium mixing bowl, combine the the eggs, parmesan cheese, parsley, salt and pepper. Beat until well combined. Set aside.

In a large skillet set over medium heat, melt the butter.

When the noodles are done, drain the pasta and add it to the skillet with the butter. Toss to evenly coat the noodles.

Add the egg mixture to the skillet. Quickly mix, for about one minute, until the eggs and noodles become thick and creamy. Be careful that you do not cook the eggs too long or they will become scrambled.

Serve immediately.
