This orange almond cake recipe does not require many ingredients and makes the perfect cake for afternoon tea.
Fill a medium saucepan with water and submerge the oranges. Bring to a boil and then cover and simmer for about an hour. Drain and cool.
Chop the cooled oranges into quarters and discard the seeds. Place the oranges, skins and all, into a blender and then puree until smooth.
Preheat oven to 350 degrees F and grease an 8-inch round cake pan.
In a mixing bowl, beat together the eggs and sugar until thickened. Set aside about a third of the mixture.
Mix the orange puree, ground almonds and baking powder with the remaining egg and sugar mixture. Once combined, fold the remaining third of the egg mixture into the batter.
Pour the batter into the pan and bake 45-60 minutes. Test at 45 minutes by inserting a toothpick in the middle. If it comes out clean it is ready.
Remove and let set for about 20 minutes and then turn out onto a cooling rack to finish cooling.
Once cooled, sift confectioners' sugar on top and serve.
