A Delicious recipe for orange meringue pie. This is a fun twist from the lemon meringue pie.
Preheat oven to 350 degrees F. lightly grease a 9 inch pie plate.
To make the crust. In a large bowl, combine flour and salt. Cut in butter until mixture resembles coarse crumbs. Stir in water, a tablespoon at a time, until mixture forms a ball. Wrap in plastic and refrigerate till cold. Roll dough out to fit pie plate. Place crust in pie plate. Press the dough evenly into the bottom and sides.
For the filling. In a medium size saucepan combine the sugar and cornstarch. Stir in water until smooth. Stir in egg yolks. Stirring constantly over medium heat, bring mixture to a boil. Boil for 1 minute. Remove from heat. Stir in sour orange juice and margarine and pour over pie shell.
In a mixing bowl, beat egg whites at high speed until they are foamy. Gradually beat in the sugar and continue beating until stiff peaks form. Spread over hot filling. Bake for 15 to 20 minutes until meringue is golden brown. let cool.
Refrigerate until ready to serve.
