This is a simple recipe for oven baked chicken thighs. The thighs should soak in the marinating sauce for at least 2 hours or longer, so plan a little in advance of cooking.
Stir the oil, garlic powder, lime juice, ginger, salt and paprika together and pour into a container with a lid or a zip-loc bag.
Rinse the chicken in cold water and pat dry with paper towels.
Place the chicken thighs into the marinade and toss once in awhile. You want to make sure that all sides get coated.
Place into the refrigerator for one hour or longer.
When you are ready to bake the thighs, preheat the oven to 425°F.
Line a baking sheet with aluminum foil, and grease with a little oil.
Place the chicken thighs onto the baking sheet leaving at least one inch of space between them.
Place into the preheated oven and bake for 35-45 minutes, or until the skin is crispy and the juices run clear. Use a sharp small knife to check to see if done.
When cooked, a meat thermometer should read 165ºF. stuck into the thickest part.
