Parmesan Chicken Recipe

This parmesan chicken recipe is easy to prepare and delicious to eat. It is very nice served with a fresh spinach salad.


2 chicken breasts, trimmed
1/4 cup breadcrumbs, dried
1/4 cup flour
2 Tablespoons parmesan cheese, grated
1/4 cup yogurt
1/4 cup olive oil
2 cups bunch spinach, washed
1 Yukon gold potato, cubed
1/4 cup baby peas
2 Tablespoons olive oil
1 Tablespoon lemon juice
1/2 Teaspoon honey
salt and pepper to taste

(Serves 2)


Combine breadcrumbs, flour, parmesan cheese, and a pinch of salt and pepper on a plate. Place yogurt in a medium bowl. Dip chicken into yogurt, then coat in crumb mixture, place on a plate, cover with food wrap and chill for 15 minutes.

Meanwhile cook potato till fork tender drain and set aside for salad. At the same time cook baby peas till tender drain and set aside for salad.

Heat oil over a moderate heat. Cook chicken until no longer pink, turning once and transfer to a clean plate. Rest 5 minutes before serving.

While chicken rests combine spinach, potatoes, peas, 2 tablespoons olive oil, lemon, honey and salt and pepper to taste.

Place spinach salad on plates top with parmesan chicken and serve.
