Peach Cake With Berry Jelly Recipe

A Yummy recipe for peach cake with a berry jello topping. This is a fresh and light dessert.


Peach cake
1 cup butter, softened, plus more for buttering the pan
3/4 cup sugar
3 eggs
2 tsp vanilla extract
1 1/2 cups all purpose flour, sifted
1 tsp baking powder
1/4 tsp salt
1/4 cup plain Greek yogurt or sour cream
2 to 3 large peaches, (1 1/2 cup diced)
1 package raspberry jello
3 cups mixed berries


Preheat oven to 350F. Grease a 9 x 9 x 2 deep baking pan.

In a mixer, cream butter and sugar together until creamed and fluffy. Add eggs, one at a time, beating well after each addition. Next, add vanilla, flour, baking powder, and salt. Mix until just combined.

Slice peaches in half, remove the pit, and dice into small cubes. Gently, fold in peaches and yogurt until combined.

Pour batter into the prepared pan and place in the oven. Bake for 45-50 minutes or until the top is nice and. Allow to cool then remove to a cooling rack to cool completely.

wash out baking pan and prepare jello as to package directions. place fruit in pan and pour jello over top. let cool and then place cake on top of jello when close to set. chill until fully set.

To serve place pan in warm water for 3-4 minutes then turn out onto serving plate.
