Potato With Dumpling Soup Recipe

A very yummy recipe for homemade potato soup with dumplings. Great served with buttered bread.


4 large potatoes, peeled and rinsed
4 celery stalks, diced
1 carrot, peeled and diced
1 large onion, diced
4 cups chicken stock
1 tablespoon parsley, chopped fine
1 teaspoon dill, chopped fine
1 teaspoon salt
2 Tablespoons flour
1 cup milk
1/2 cup all purpose flour
1 egg
1 teaspoon salt
1/4 cup milk


Cut potatoes into small bit sized pieces.

Heat a large soup pot to medium heat, melt butter and fry onions cellery and carrots for 3-5 minutes.

Add in potatoes and chicken stock. add enough water to cover potatoes by about an inch.

Bring to a boil then recuce heat to simmer. stir in dill and parsley.

In a bowl combine the dumpling ingredients, stirring well.

Drop teaspoon fulls of dough into simmering soup. Do not stir until dumplings begin to float.

In a small bowl mix flour and salt with cold milk until no lumps are left. Stir milk into soup and bring to a boil to thicken soup.

Salt and pepper to taste.
