Sauerkraut and sausage served with small potatoes and a dollop of sour cream makes a simple satisfying meal.
Preheat the oven to 350F.
Melt the butter into an oven proof baking dish.
Put in the chopped onions and fry until golden brown.
Turn off the heat.
Put the rinsed and drained sauerkraut on the bottom layer.
Cut the sausage into big chunks and nestle into the sauerkraut.
Place the potatoes in the baking dish next.
Season with a sprinkle of salt and pepper and parsley.
Cover the dish with a lid or aluminum foil.
Place into the oven and bake for 45-50 minutes or until potatoes are tender when poked.
Remove from the oven and serve.
This dish is very tasty with a little dollop of sour cream.
