Pumpkin Toffee Struesel Muffins Recipe

A Delicious recipe for pumpkin toffee struesel muffins, great served with vanilla ice cream.


1 Boxed Spice Cake Mix
1cup Pumpkin
1 Egg
1 cup Water
1/2 cup Toffee Pieces

Struesel Topping
1 C. packed Brown Sugar
1 C. Flour
1/2 c. Margarine-cold cut into pieces.


Preheat oven to 350 Line muffin tins.

Mix the cake mix with the water and egg. Beat until smooth.

Add in the pumpkin, mix well then fold in the toffee pieces.

Fill muffin tins each cup 3/4 full of batter.

In a bowl, crumble the butter, brown sugar and flour for the struesel topping.

Sprinkle each muffin with struesel topping.

Bake for 22 minutes.

Cool in pan.
