A quick and nutritious dinner or breakfast!
Dice your garlic into fine pieces.
In a large sauce pan, saute garlic with oil, salt and pepper until browned.
Add spinach leaves directly to the pan.
Add 1 tbsp of water (or white wine if its handy), and cover your greens.
Let them simmer for several minutes, stirring and adding more liquid (water or wine) if needed.
In a separate pan, add bit of butter and let melt.
Crack 2 eggs into the pan.
Let cook with a lid on, for 6-7 minutes until the white part of the egg is full cooked and not runny at all.
Arrange spinach onto plates and top with fried egg, salt, pepper and lousiana hot sauce.
