Roasted Potatoes And Artichokes Recipe

This roasted potato and artichoke recipe is for artichoke lovers. It full of flavor and great as a main dish or a side dish.


4 potatoes, peeled and cut into 1 inch chunks
2 Tablespoons vegetable oil
3 cloves garlic, minced
2 artichoke hearts, cut into 1 inch chunks or 2 cups canned artichoke hearts
4 Tablespoons lemon juice
4 Tablespoons fresh cilantro, chopped
2 Tablespoons Herbs de Provence


Preheat to 450 degrees.

Lightly grease a large baking sheet or shallow baking pan.

In large bowl, toss the potatoes with 1 Tablespoons vegetable oil and Herbs de Provence.

Spread evenly on the baking sheet and bake for 20 minutes, turning half way through.

In same bowl, toss artichokes with the remaining oil and garlic.

Add to potatoes and bake for an additional 20 minutes.

Transfer the potatoes and artichokes to a large bowl.

Add lemon juice and cilantro and season with salt and pepper.
