Roasted Savory Potato And Mushrooms Recipe

A Flavorful recipe for roasted savory potato and mushrooms.


4 cups yellow potatoes, cut into wedges
2 cups mushrooms, sliced
2 Tablespoons butter,melted
1 teaspoon dried basil
1 teaspoon dries thyme
1/2 teaspoon salt
1/4 teaspoon pepper

To Serve
1/2 cup sour cream
1 cup cherry tomatoes, halved


Wash the potatoes. If there are any blemishes, cut them off.

Put the potatoes into a pot and put just enough water to cover.

Par-boil the potatoes until partially cooked and still firm. Drain the water, set aside.

Heat a large non stick frying pan to medium-high heat.

In a large bowl, put the melted butter and stir in seasonings.

Add in par-boiled potatoes and toss to coat.

Pour potato mixture into hot frying pan and cook on each side until crispy and golden, Add additional butter 1 teaspoon at a time if needed.

Add in mushrooms and cook an additional 5-7 minutes until mushrooms are soft.

Serve with sour cream and fresh cut tomatoes.
