3 medium sweet potatoes (2.5 pounds)2 large Honeycrisp apples (or other apples that will hold shape when baked)
2 Tbsp fresh lemon juice
1/3 cup packed brown sugar
1/4 cup honey
4 Tbsp unsalted butter
1/2 tsp cinnamon
1/4 tsp ground ginger
1/4 tsp kosher salt
1/3 cup chopped pecans
