Sausage And Cheese Casserole Recipe

This sausage and cheese casserole is loaded with potatoes and is a great brunch or supper meal.


4 cups potatoes, peeled, boiled and cut into cubes when cool, approx. 1 lb
4 Tablespoons butter
4 Tablespoons flour
2 cups milk
1/2 teaspoon salt
1/4 teaspoon pepper
1/2 cup Monteray jack cheese, shredded
1/2 cup sharp cheddar cheese, shredded
1 lb skinless sausage (like a farmers sausage or garlic sausage, your choice)
1/8 teaspoon paprika


Preheat oven to 350 degrees F.

Skin and cut the sausage into rounds and cook the sausage and onions on medium heat in a frying pan for about 15 minutes.

Add sausage, onions and cooked potatoes to 2 quart casserole dish. Toss together.

In a saucepan over medium heat, mix all other ingredients excepting shredded cheese and paprika and heat through.

Once heated, pour sauce over potatoes, sausage and onions and then sprinkle with shredded cheese and paprika.

Bake for 35-45 minutes or until golden brown.
