Ingredients

16 extra large white mushrooms
5 tablespoons olive oil
2 1/2 tablespoons dry sherry
3/4 pound mild Italian Sausage, casings removed
3/4 cup minced scallions, white and green parts
2 teaspoons minced garlic
1 teaspoon kosher salt
2/3 cup panko
5 ounces mascarpone cheese
1/3 cup fresh grated Parmesan cheese
1 1/2 tablespoons minced fresh parsley
