Skillet Potatoes And Ham Recipe

Looking for that perfect any time of the day meal...this is it!

Ingredients

6 medium size potatoes, cut into small cubes
2 Tablespoons olive oil
1/2 medium sized onion, diced
1 1/2 - 2 cups Black Forest Ham, cut into small cubes
3/4 cup cheddar cheese, grated
salt & pepper, to taste

Serves 6-8

Directions

Peel and wash the potatoes and cut into small cubes.

Place into a saucepan and put just enough water to cover.

To parboil the potatoes, bring to a boil for about 10-15 minutes until almost tender. Test by poking with a fork.

You want them to be cooked but still on the firm side. Don't overcook!

Put potatoes in a colander and strain the water.

Heat the oil over medium high heat in a large cast iron skillet.

Place the onions into the skillet and cook 3-4 minutes until tender.

Add the ham and let it brown, stirring with a flipper.

Add the potatoes to the skillet and cook on medium-high heat for 5 minutes until everything is heated through and potatoes are finished cooking.

Season with salt and pepper to taste.

Top with grated cheese, turn down the heat and let the cheese melt then serve.
