This spicy and sweet kebabs bites are delicious dipped in the plum sauce.
Soak the 6 wooden skewers in a shallow dish of water for 20 minutes.
In a medium bowl, combine the lime juice, sriracha sauce, rice vinegar, garlic, sour cream, and coconut milk. Mix until well combined.
Add the chicken and toss to well coat.
Cover and allow the chicken to marinate for 2 hours in the refrigerator.
Meanwhile make the dipping sauce.
In a small bowl, combine the plum sauce, lime juice, garlic and rice vinegar. Mix until well combined. Set aside.
After the chicken has marinated, skewer the chicken pieces onto the wooden skewers.
Grease grill with olive oil, and heat your BBQ to 400ºF.
Once BBQ has come to temperature, carefully place the skewers onto the greased grill.
Grill until chicken is completely cooked through, about 2-3 minute on each side.
Serve skewers immediately with the dipping sauce on the side.
