Ingredients

About 10 ounces thin Thai rice noodles
2 1/2 tablespoons sesame oil
1/2 cup chopped onion
3/4 cup shredded carrots
1/4 cup chopped leek
About 1 1/4 pounds boneless skinless chicken breasts, cut into thin slices
1/4 cup honey
1/4 cup extra crunchy peanut butter
1/4 cup low-sodium soy sauce
1/2 tablespoon crushed red pepper
1 1/2 tablespoons rice vinegar
1 tablespoon lime juice
1 tablespoon Thai chili paste
Fresh cilantro for garnish
1/4 cup chopped peanuts
