Strawberry Cheesecake Recipe

A light and fluffy no bake cheesecake recipe, with fancy chocolate garnish.


1 1/2 cups graham cracker crumbs
6 Tablespoons butter, melted
2 teaspoons granulated sugar
1 box - (3 oz) strawberry flavor gelatin
2/3 cup boiling water
2 cups cottage cheese
2 cups cream cheese, at room temperature
2 Tablespoons granulated sugar
1 teaspoons vanilla extract
1 cup heavy cream, whipped
1/4 cup chocolate, melted
1 jar marschino cherries



Grease an 8 inch spring form pan.

Mix crumbs and sugar with melted butter until evenly moistened.

Press firmly over bottom of prepared pan. Place in freezer.


Dissolve gelatin in boiling water in measure cup.

Puree cottage cheese in food processor until creamy. Add gelatin, cream cheese, sugar and extract; process until smooth.

Pour into prepared crust; smooth top. Cover and refrigerate 4 hours, or until set.

Melt chocolate and drizzle onto wax paper in desired design, refrigerate until ready to serve.


When ready to serve, whip heavy cream to stiff peaks. Garnish each serving with a chocolate design and a cherry.
