These strawberry muffins are made with a lemon strawberry cream cheese icing.
Preheat oven to 350F
Line a muffin tin, with cupcake liners
In a mixer, mix up strawberries until they are smashed up a bit. Add in sugar, oil, and eggs until well incorporated.
Whisk together flour, baking soda and salt. Add to strawberry mixture and mix until well incorporated.
Fill prepared muffin tin with 3/4 of batter.
Bake for 15 to 18 minutes, or until an inserted toothpick comes out clean. Set to cool, once cool to touch take cupcakes out of pan and let cool completely on a wire rack.
Put strawberries in a food processor or blender, and puree
In a mixer beat together, butter, cream cheese and lemon juice. Mix strawberry puree and mix until well incorporated. Mix sugar on low speed until incorporated, then mix on high speed for about 5 minutes.
Put frosting in piping bag with star tip and pipe on top of cooled cupcakes.
Garnish with fresh strawberries
