Need a quick dessert idea, the aroma of these apples stuffed with cinnamon and raisins baking will have everyone looking forward to dessert time.
Preheat oven to 350 degrees F
Use a heat proof bowl and measure the raisins into it, a 2 cup glass measuring cup works great.
Boil 2 cups of water and pour over the raisins. Set aside to soften while preparing the apples. About 20-30 minutes.
Once the raisins are softened, core and pierce the apples with a fork in several places to prevent them from bursting.
Drain al lthe water out of the raisins and mix in the nuts, vanilla and cinnamon.
Pour the 1/2 cup water into a glass baking dish.
Place the cored apples into the dish and dividing the raisin mixture, stuff the apples. Put one teaspoon of butter near the top of each stuffed apple mixture, so that when the butter starts to melt it goes into the apple core.
Cover the baking dish with foil and bak for about 30 minutes or until tender.
Best served warm out of the oven with vanilla ice cream, cream or whipped cream.
