Stuffed Baked Potato Recipe

This stuffed baked potato has just the perfect combination of cheeses and seasoning.


4 large russet baking potatoes
1/2 cup cream cheese, softened
1/2 cup sour cream
3 tablespoons butter
1/2 cup bacon, cooked and sliced
1/2 cup swiss cheese, shredded
1/2 cup cheddar cheese, shredded
parmesan cheese
salt and pepper

Serves 6 - 8


Preheat oven to 400F.

Wash potatoes, leave skin on and poke a couple times with a fork.

In a baking dish, bake potatoes for 1 hour. Once done set to cool. Once cool enough to touch. Cut potatoes in half, and with a spoon scoop out potatoes and place in a bowl. Save the skins. Reduce the heat of oven to 350F.

Add cream cheese, sour cream and butter to potatoes that you scooped out. Beat these ingredients together till creamy. Mix in bacon and both cheeses. Scoop potato mixture back into skins. Sprinkle with parmesan, salt and pepper.

Re-bake for another 15 to 20 minutes. Serve hot.
