The recipe for Surprise Cupcakes has a special bite of something special.
Cupcakes
Preheat oven to 350 degrees F.
Cream together butter, sugar, salt, baking powder and vanilla until fluffy and light colored, or about 5 minutes.
Add eggs one at a time until incorporated. Scrape down sides as needed.
With the mixer on low, add one third of the flour, then half the milk, then another third of the flour, the rest of the milk and finally the remaining flour.
Pour into a cupcake tin with cupcake liners so they are 3/4 full.
Bake cupcakes for 13-15 minutes or until a toothpick inserted in the center comes out clean.
Cool cupcakes completely before adding the surprise.
When cupcakes have cooled, hollow out a small hole in the center and fill hole with mini chocolates or m&ms.
Creamy Frosting
In a medium bowl, sift together the confectioners sugar and cocoa, and set aside.
In a large bowl, cream butter until smooth, then gradually beat in sugar mixture alternately with evaporated milk.
Blend in vanilla. Beat until light and fluffy. If necessary, adjust consistency with more milk or sugar.
Pipe on the icing over the entire cupcake.
