Sweet Potato Stuffed Peppers Recipe

These sweet potato stuffed peppers recipes make a delicious side dish for any meat dish or entree.


Serves 4

1/4 cup olive oil
1 onion, chopped
4 garlic cloves, minced
2 medium sweet potatoes, peeled & cut into 1/4 inch chunks
1/4 cup chopped fresh parsley
3/4 cup bread crumbs
1/4 teaspoon salt
1/4 teaspoon black pepper
4 red bell peppers, cut along the top, cleaned and seeded
1/2 cup water


Preheat oven to 400 degrees F.

Coat a large baking sheet and an 8-inch square baking dish with cooking spray.

Spread sweet potato chunks across baking sheet and bake for 20 minutes.

Meanwhile, in a large skillet over high heat, heat olive oil.

Saute onion and garlic until softened, approximately 5 minutes.

Remove from heat and add parsley, bread crumbs, salt, and pepper; mix well.

Remove sweet potatoes from oven and add to bread crumb mixture.

Fill each pepper with mixture and place in baking dish.

Pour water in bottom of baking dish.

Bake 20 minutes, or until golden and tender.
