This tuna potato casserole is the ultimate meal when you are pressed for time.
Peel potatoes and slice them into thin rounds.
Put the potatoes, with a dash of salt, into a saucepan
Cover potatoes with boiling water and bring to the boil.
Simmer for about 12 minutes - until the potatoes start to be easy to poke.
Preheat oven to 375F.
Strain the potatoes and put them in a large mixing bowl and season with butter, milk, pepper, paprika and salt.
Open and drain tuna and mix it into potatoes.
Transfer everything to a baking dish.
Sprinkle grated cheese on top of the tuna/mash mix
Bake for 20 minutes or until cheese is browned to your liking.
If you like really crunchy cheese, then for the last 5-8 minutes turn the heat up to 500F and just watch it does not burn.
Let rest on counter for 8 minutes before serving.
Garnish with fresh parsley.
